Why am I able to see the gifts received (tips) of some models on their full bio pages and not on others?

Because the model/ studio controls what information is shown/ hidden on their bio page.
Some models choose to show the list of their gifts and who sent them, others choose not to, to keep this information private and respect the privacy of their supporters.
Some models show top 10 members or largest tippers, some allow you to see their VODs and others don't.
Even reviews, some hide all, some hide none and some hide only the negative ones.
It's totally up to them what they want to show.

The model was clueless. A month ago he did not know I could see his tips list and top 10. Yesterday when I couldn't see them, he knew nothing about settings to change it.

Okay, so you have a clueless model, all that means is that he doesn't maintain his own bio page and an admin from the studio controls it.
Check other models from the same studio and don't be surprised if theirs are set up in the same format.
Also the fact that you mentioned in chat that you were looking at and could see this information probably initiated the change. And it doesn't matter if it was in open chat or private or whisper, the admin saw what you said.

Reviews are a tempest in a teapot. Meaningless. But if you want to make your point, post it as a new topic, as it has nothing to do with the topic of this thread. It is easily possible your review was posting when an electrical glitch sent it to the depths of space. You also easily could just post another review for her and make everybody happy.
